Finch & Fork’s Fresh Take: Meet the Chef with John Vasquez

There’s something special about getting a behind-the-scenes peek at where your food comes from, especially when it involves happy hour bites, a new menu preview, and a chef with serious culinary chops.

Last night, I had the chance to attend a “Meet the Chef” event at Finch & Fork inside the Canary Hotel to welcome their new Executive Chef, John Vasquez. With a focus on seasonality and a nod to his Texas roots, Chef John’s approach is all about bold flavor, fresh ingredients, and a playful take on coastal cuisine.

The happy hour was the perfect intro, we got to hear directly from the chef about his inspiration, his background, and where he hopes to take the menu next. And of course, there were bites. Delicious, thoughtful, very snackable bites that already have me planning my next full dinner there. Think southern influence with a Central Coast twist, comforting yet elevated.

There’s something exciting happening at Finch & Fork. You can feel it in the energy, the hospitality, and the food itself. I’m already looking forward to going back and diving into the full menu.
