Bold Flavors and Fresh Faces at Loquita Santa Barbara
Come with me to Loquita for a night that felt like a true celebration. I had the chance to attend a reception welcoming their new Executive Chef Cristian Granada, and let me just say, this is a culinary chapter I’m so excited about. Originally from Colombia and coming to Santa Barbara from his most recent post in Washington, DC, Chef Granada brings a bold, creative energy that you can taste in every bite.
We got to try a preview of some of the new pintxos, and they were little bites of pure magic. Think tiny uni cones that packed a punch and gazpacho spheres that burst in your mouth, playful, beautiful, and full of flavor. It’s the kind of food that makes you slow down and pay attention, which I always love. You can tell there’s real intention behind every element on the plate.
The real showstopper for me, though, was the monkfish paella with caviar. It was rich, luxurious, and unlike anything I’ve had in town recently. Monkfish is such an underrated fish, and paired with the salty pop of caviar, it was unforgettable. I’m still thinking about it days later, which is always the sign of something truly special.
What I’ve always loved about Loquita is that it manages to feel both elegant and welcoming, and this new menu direction keeps that spirit alive. There’s an energy in the room that matches the food… Lively, a little adventurous, and so much fun. You feel like you’re part of something exciting just by being there.
If you haven’t been in a while, now is the perfect time to go back. Chef Granada’s new dishes are fresh, vibrant, and full of personality, and they’re a beautiful fit for Loquita’s Spanish-inspired vibe. Grab some friends, sip a cocktail, and make a night of it.
